Veggie Egg McMuffin

Ingredients

  • 2 cup spinach
  • 6 ounce cheddar cheese
  • 12 large egg
  • 12 regular English muffin, wheat

Serve With

  • 2 medium banana

Instructions

  • Preheat oven to 350°F. Spray a muffin tin with cooking spray.
  • Chop spinach and shred cheese. Whisk together the eggs, then fold the spinach, cheese, and any other vegetables you may like into eggs. Pour into muffin pan and bake 20-22 minutes or until eggs are cooked through.
  • Assemble sandwiches by adding an egg ‘muffin’ to English muffins. Serve each sandwich with 1/2 a banana.
