- 2 cup spinach
- 6 ounce cheddar cheese
- 12 large egg
- 12 regular English muffin, wheat
Preheat oven to 350°F. Spray a muffin tin with cooking spray.
Chop spinach and shred cheese. Whisk together the eggs, then fold the spinach, cheese, and any other vegetables you may like into eggs. Pour into muffin pan and bake 20-22 minutes or until eggs are cooked through.
Assemble sandwiches by adding an egg ‘muffin’ to English muffins. Serve each sandwich with 1/2 a banana.
