We’re having an Easter dinner on Sunday with the grandparents and my sisters family! In trying to determine how we could incorporate fruits and veggies into our appetizers, I thought about one of my favorite party-friendly snacks: pinwheels. We love them with just salsa in the middle, but for this Easter platter, we decided to try different fruits and vegetables to really make it colorful.
Here’s how we did it. First we picked some colorful fruits and vegetables! We decided to use:
- Yellow Peppers
- Red onions
I ran each one through our food processor, so the food was super small, and finely chopped (And the carrot grated.)
We spread each tortilla with a tablespoon of cream cheese, followed by a layer of each fruit or vegetable.
Then, we tightly wrapped it up, and wrapped each roll in plastic wrap. We let them sit in the fridge to firm up for a few hours, so they were easier to cut. It was nice to be able to make these tortilla rolls ahead of time, and then just cut them up right before serving.
After your tortilla rolls have sufficiently chilled, slice each one about 1 inch thick. Use a serrated knife so you don’t crush your rolls. You want them to stay round, or oval.
We also made some carrot flowers for decor. I tried copying this method. And OK, mine didn’t turn out as pretty as the one on the site, my kids still thought they were cute and festive!
You can certainly get creative with your fillings.. Add vanilla extract to the rolls with strawberries. Add garlic powder and parmesan cheese to your spinach rolls, etc. We just used plain cream cheese- and they were still pretty great! Of course, the strawberry ones are always a kids favorite 🙂
Also- I picked up the Egg shaped platter from Target for $2 in the Easter section a few years ago… it has served us well.
