Hi There! It’s Toria from The Step Stool Chef.  My 7-year-old son and I are always looking for fun, easy to follow ideas that empower kids to be more independent in the kitchen.  We love to find easy to follow recipes kids can try at home but every now and then I like to find easy recipes that parents can try at home they their kids will love.

I think I must be on an “orange” kick lately.  Maybe as a native of Florida, it’s my way of connecting to my love natural of citrus.  On my last post, I shared a recipe for Orange Apple Cider and now this recipe for Honey Orange Roasted Carrots.

First, scrub peel & slice the carrots.  I like slicing carrots into sticks because my kids think that it is fun to eat them like fries.  Lay the sliced on a rimmed baking sheet in a single layer.

Add the orange zest and olive oil to the carrots.  Then mix the honey and orange juice and pour in the pan.  I also added orange slices from a second orange to the pan.

Finally, add thyme along with salt & pepper then place in a pre-heated oven at 375 degrees for 30 minutes or until tender.  Although I decided to make this dish for my family, this recipe was so easy that next time I will let my little chef give it a try.   Kids are more likely to eat the foods they make and cooking with your kids makes for great bonding moments.

Ingredients

  • 1 pound carrot
  • 2 tablespoon olive oil
  • 1 teaspoon orange zest
  • 1/3 cup orange juice
  • 1 medium orange
  • 2 tablespoon honey
  • 1/2 teaspoon thyme, dried
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground

Instructions

  • Pre-heat oven to 375° F.
  • Peel and slice carrots.  Grate orange peel.  Preserve slices.
  • On a large rimmed baking sheet, arrange carrots & sliced oranges in single layer.
  • Add 2 tablespoons olive oil, orange peel, thyme and salt & pepper. Mix honey and orange juice then pour over carrots & oranges. Cover with foil and roast for 30 – 35 minutes. You can choose to remove the foil after 15 minutes to allow more browning.

Of course you meant to say ‘use organic produce’ otherwise you’re suggesting I feed my family orange pesticide zest in the recipe, along with other pesticide laced ingredients. You’re publishing supposedly healthy recipes when in fact unless you use organics, there is nothing healthy about it. Wake up!! We are poisoning our kids and ourselves!!

Our message is to promote eating more fruits and vegetables whether it is organic or conventional. It is our opinion that consuming more fruits and vegetables has a greater impact on health that just being concerned with organics.

how important would you say the actual orange is? I don’t have one on hand so i can’t get do the zest or the slices from the ingredients list. I do have the juice though, and everything else… Thanks!
