My kids love strawberries. So much that even though they aren’t in season at all right now, my mom has been really nice and has been buying them at Costco for my girls as a treat. We have been growing strawberries in my garden for the last 3 years. And since I have rearranged my garden 3 times, my strawberry plants have been transplanted 3 times. I wasn’t sure how they would do this year after the third transplant, but they actually did better than ever! My girls (and the neighborhood kids) were picking strawberries well into October. They were even trying to pick them after the first frost when there were still red berries on the plants – they are just frozen and had started rotting. Ew.

Anyway – since Valentines Day is coming up I have had pink, red and strawberries on my mind. Instead of stuffing my kids full of candy (which I am sure they will get plenty of) I was trying to think of something a little better they can have as a treat on Valentines. Of course! Strawberries and butter. Bam! Strawberry Honey Butter was born. I am a totally sucker for bread of any sort (bread, bagels, pancakes, waffles, you get the idea) slathered with a yummy topping.
This only has 4 ingredients! It is super simple to make. First, rinse and hull your strawberries and place in a food processor. Blend until you have a smooth puree.
The smell of strawberry puree is like heaven. Seriously, I could just eat this by the spoonful.
Next take your puree and push it through a fine mesh sieve. This is to remove all of the seeds. This step does take some time – it probably took me 10 minutes. At first I was thinking I would just skip this step, but trust me – it is worth it. Keep pushing it through until all you have left is mostly just seeds in the sieve.
You will have a beautiful seedless puree at this point. Place in a pot and add your honey and lemon juice. Bring the mixture to a boil and cook for a couple of minutes until it thickens slightly.
Allow this mixture to cool to room temperature. In the meantime, your butter should be sitting out at room temperature as well. When they are both room temp, whip them together. I used my kitchen-aid and whipped the daylight out of them. And voila – you will have a creamy, fluffy, flavorful strawberry honey butter. Put it in a cute jar to give away as a Valentines gift!
We slathered ours on a warm piece of toast. Yum – when it melts, it turns a brilliant red color. It is so good you will never go back to regular butter.
Fresh Strawberry Honey ButterPrint Pin Rate
- 1 pint strawberries, rinsed and hulled
- 3 tbsp honey
- 2 tsp fresh lemon juice
- 12 tbl butter or 3/4 cup
- Puree strawberries in a food processor.
- Push puree through a fine mesh sieve to remove seeds.
- Place in a pot with honey and lemon juice.
- Bring mixture to a boil, and cook for a few minutes until slightly thickened.
- Allow to cool to room temperature.
- Whip with room temperature butter.
