Trying to include fruits and/or vegetables at every meal requires us to get creative! One of those fruits I want to include more of this spring is fresh pineapple!

Pineapple is great because it benefits:

  • Immunity!  1 cup of pineapple has 131% the daily value of vitamin C.
  • Digestion! Pineapple has enzymes that specifically assist the digestive process.
  • Energy! Pineapple contains manganese necessary to convert food to energy!

I bought the sweetest pineapple at the grocery store this week.  We just about finished it off, when I cut off a chunk to include in some fruit quesadillas.  We decided to cut it up and add other tropical fruits.  Our Fruity Breakfast Quesadillas Recipe included:

  • Pineapple
  • Strawberries
  • Oranges
  • and a mango

We then mixed the fruit with some light cream cheese, and spread it between two whole wheat tortillas, and grilled it until the tortillas were crispy.

Fresh and Fruity Breakfast Quesadillas Recipe

Ingredients

Chop enough fruit to get 2 cups total of

  • 2 cups chopped tropical fruit
  • 8 small whole wheat tortillas
  • 4 tbl cream cheese, light
  • cooking spray

Instructions

  • Chop enough fruit to get 2 cups total of pineapple, strawberries, oranges or mangos.
  • Mix cream cheese with fruit.
  • Spread equally among four whole wheat tortillas.
  • Top with remaining tortillas to make a “sandwich.”
  • Heat a non-stick griddle or cast iron skillet. Spray with cooking spray.
  • Cook both sides of each quesadilla until crispy.

This is such a great idea. It seems that I can wrap almost anything into a tortilla and call it a quesadilla and my kids will eat it; whereas if I were to fix it separately they wouldn’t touch it. That looks like a great summer dish as well.

What kind of tortillas do you use? I would love to be able to serve tortillas again, but I don’t like to make them and I haven’t found any that I consider “real food”. I haven’t been able to find any that aren’t highly processed, with ingredients like GMO sugar, GMO corn, hydrogenated oils or palm oil, and presevatives.

If you live in the area of a site, Bountiful Baskets co-op has AMAZING tortillas without all the junk found in most brands. I just read the whole wheat Trader Joe’s tortillas package and they are definitely better (as far as healthy ingredients) than any I’ve seen. I’m not thrilled about the soybean oil, since we are trying to stay away from soy. However, they have a short ingredient list that looks decent so I’m going to try them. I didn’t know Trader Joes made tortillas. Thanks for your help.
