Ingredients

  • 1 cup Millet, cooked
  • 1 cup BARLEY, PEARLED, COOKED
  • 1 cup, chopped bell pepper, red
  • 1 pepper bell pepper, orange
  • 1/2 cup corn, canned
  • 1 cup, chopped bell pepper, green
  • 1/2 cup, chopped onion, red
  • 1 cup, pieces or slices mushrooms, white
  • 1 cup Red Beans, Canned
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp, ground black pepper, ground
  • 1/2 tsp, ground OREGANO, DRIED
  • 1/2 tsp parsley, dried
  • 1/2 tsp, ground BASIL, DRIED, GROUND
  • 1/2 cup, chopped walnuts

Instructions

  • Prepare the barley and millet according to package directions.
  • Chop all vegetables; mix everything including olive oil and spices, in a large bowl. Serve or store covered in refrigerator.
