Carrot Cake Oats

  • 2 medium carrot
  • 2 cup oats, dry
  • 1/2 ounce chia seeds
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cloves, ground
  • 1/8 teaspoon vanilla extract
  • 2 cup milk

Top With

  • 1/2 cup yogurt, plain
  • 1/4 cup, chopped walnuts


  • Peel and finely grate carrots.  Then toss all ingredients into a large bowl and thoroughly mix together.  Put mixture into 4 containers that may be covered.  Place in the refrigerator overnight.  In the morning, you may add yogurt and walnuts as a topping.  Eat cold. This overnight oats is not meant to be cooked.
