Why is Blueberry Ice Cream hard to find in stores?

Blueberry ice cream is a flavor that is not often seen in ice cream shops or at stores because of the seasonality of blueberries. These berries can be an expensive ingredient and so it is hard for stores to make a profit from this flavor.

The great thing about this recipe is that you can buy blueberries in season at a good price, and freeze them to use later! Frozen fruit not only keeps its flavor amazingly well, but also its nutrition.

What Are The Health Benefits of Blueberries?

Blueberries are high in antioxidants and so are known for being one of the most healthful fruits. The reason that are blue is because they are high in anthocyanin which gives them their color and a lot of their health benefits.

Blueberries contain high amounts of Vitamin C, B6, and K. A lot of studies have shown benefits with heart health, skin health, blood pressure and mental health.

How Do I Freeze Blueberries?

The best way to freeze fresh blueberries:

  • Rinse well and gently pat dry
  • Lay flat on a making sheet
  • Freeze
  • Store in an airtight container

Freezing these berries is incredibly easy!

How to Make Blueberry Ice Cream

There are a few ways to make this Blueberry Coconut Ice cream. You can make it with frozen blueberries or fresh blueberries.

To make with fresh blueberries: Combine all ingredients in a blender and blend until smooth. Pour into a shallow container and freeze for 2 hours or until frozen all the way through. Scoop ice cream into small bowls and enjoy!

To make with frozen blueberries: Set blueberries out for 10-15 minutes and let the fruit soften just a bit. Combine ingredients in a blender and blend until smooth. Another option is not to let the blueberries soften and blend in a food processor. It won’t be as smooth, but still delicious!

I posted a comment yesterday and it seems to have simply disappeared. This is a sorbet, not an ice cream. Unless you use sweetened coconut flakes, this will not be sweet. I use unsweetened and add four tablespoons of sucralose. If you “serve immediately” as directed for frozen blueberries, all you will have is a brain-chilling smoothie. Even with frozen blueberries, an hour in the freezer (I use cookie sheets) is required to give a sorbet consistency.
