Ice Pops are a favorite in our house, especially these Pineapple Lemonade Ice Pops with Blueberries!  Sometimes it may seem easier to just purchase already made ice pops and frozen desserts at the store, but I’m going to show you how simple they are to make at home.  We recently went blueberry picking, instead of blending up the blueberries we wanted to keep them whole.  The berries we picked are so sweet that you’ll feel like you’re eating candy, we like to call them natures candy.  While we were picking, our daughter was putting more in her mouth than in the bucket.  She’s not even a huge fan of blueberries, but I will tell you this.. if your child takes part in the food process they appreciate it even more.  She hasn’t stopped asking for blueberries since we went blueberry picking.  We’re going again next week too!  If you’re not a fan of blueberries you can easily add in your favorite berries.

Whenever I make ice pops, I like to do it with just a few ingredients, whole foods and only using natural sugars.  If you buy them in the stores they can be loaded with artificial colors, flavors and packed with added sugar.   In fact, while our recipe calls for a bit of honey, we don’t use any at all!  My daughter and I love the tartness you get from the lemon.  You could even swap out the regular lemons and use Meyer lemons which are sweeter.  We make this recipe to drink too – get our Pineapple Lemonade Recipe over on our blog Know Your Produce.  Since this isn’t a strained juice, rather a whole juice you don’t have a hard icy ice pop.  Instead it has a softer texture and not crystalized ice.  You could even add in a little banana if you wanted to make them a bit creamy and sweeter too!

You can use whatever mold you like.  There’s some molds that can freeze your pops within minutes, but we really love one that uses popsicle sticks – they make everything more fun!

  • Chop up your pineapple into chunks.
  • Combine all of the ingredients aside from the blueberries in a high speed blender and blend until completely smooth.
  • Pour the whole juice mixture into the ice pop molds with a little room left to drop in some blueberries.
  • Place in the sticks and freeze for 4 hours.  Enjoy!
