Inside Out Cucumber Sandwiches

The longer our family maintains the goal of making half our diet fruits and vegetables, the more I’m convinced it’s the perfect way to eat.  It’s not complicated, it doesn’t restrict our other dietary choices and I know that my kids are getting a great balance of protein, fat, carbs, fiber, sugars, vitamins, minerals, enzymes, phytochemicals, antioxidants, and whatever else science discovers next.  We can know we are already eating it!

Today, we decided to use cucumbers to make this snack 50% fruits and vegetables! Cucumbers are a great food to include in your kids diet. Cucumbers can usually be found very inexpensively, and they have such a sweet mild flavor, most kids will accept them.

So we sliced up some cucumbers and then assembled our sandwiches using:

  • Spreadable cheese, like laughing cow Cheese or cream cheese
  • Slices of cheddar Cheese
  • Slices of deli meat
  • Circles of toasted bread
  • Slices of Tomatoes

Best part about this snack: total prep time: under 4 minutes!

Love this idea! Thanks so much for posting it. I also couldn’t agree more with you aim of making at least half your diet fruits & veggies. Really looking forward to trying these “sandwiches” with my little one, especially now with cucumbers in season. Thanks!

What a wonderful idea! I have been trying to find ways to incorporate cucumbers into my diet and have been struggling to find any unique and cool recipes.

I just finished a book titled “In Defense of Food” and in it he goes on to talk about how the more colorful your plate, the healthier your meal is.

I strongly agree that fruits and veggies should make up over half if not more of our everyday diet.

Thanks for sharing the quick treat!

Today, I went to the beach with my kids. I found a sea shell and gave it to my 4 year old daughter
and said “You can hear the ocean if you put this to your ear.” She put the shell to her ear
and screamed. There was a hermit crab inside and it pinched her ear.
She never wants to go back! LoL I know this is completely off topic
but I had to tell someone!

When I initially commented I clicked the “Notify me when new comments are added” checkbox and now
each time a comment is added I get several e-mails
with the same comment. Is there any way you can remove
people from that service? Cheers!

Where do you get the cute tooth picks?

Amy says:

Jen- I think I got those at a local Asian Market, but you can also find them online in a variety of bento stores. Here’s one amazon link I found, although, like I said, I got them locally. http://www.amazon.com/gp/product/B009L9ATHU/ref=as_li_qf_sp_asin_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B009L9ATHU&linkCode=as2&tag=supheakid-20
