- 8 large egg
- 2 tbsp pesto
- 4 oz feta cheese crumbles
- 2 cup spinach
- 4 fruit clementine
- Whisk together 2 eggs at a time. Spray a skillet with cooking spray and heat to high heat. Once hot, pour the two whisked eggs into skillet. Allow to set by tilting pan around, allowing egg to fill the skillet; like a crepe.
- Flip the cooked egg so now you have the cooked side on top. Spread with 1/2 TBSP of pesto, then fill with 1 ounce feta, and 1/2 cup of spinach.
- Serve with clementines.
