Chicken & Cashew Salad

  • 8 ounce rotini pasta, whole wheat, dry
  • 1/2 ounce chicken, canned
  • 1 1/2 cup grapes
  • 2 cup spinach
  • 1/3 cup Greek yogurt, plain
  • 1/3 cup mayonnaise, light
  • 1/4 teaspoon salt
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon mustard, ground
  • 2/3 cup Cashews


  • Cook pasta as directed on package.  Drain and rinse with cold water.
  • Slice grapes in half, lengthwise. Drain chicken; roughly chop spinach. Add these to a large bowl with the yogurt, mayonnaise, salt, curry powder, ground mustard, and cashews. Add pasta and mix well to evenly coat.
  • Serve chilled.
