Our version of Cafe Rio Shredded Chicken is slow-cooked to perfection with a blend of savory spices perfect for a salad, burrito, quesadilla or enchiladas!

Ingredients
- 2 pounds chicken breasts boneless, skinless
- 1/4 cup white vinegar
- 1/4 cup oil avocado or olive oil
- 1 packet zesty italian dressing
- 1/2 tablespoon chili powder
- 1/2 tablespoon cumin
- 2 tablespoons dry ranch seasoning
Instructions
- In a medium mixing bowl, mix vinegar, oil, zesty Italian seasoning packet, chili powder, cumin, and dry ranch seasoning.
- Spray the inside of your slow cooker with cooking spray and then add the chicken. Pour the dressing mixture over the top.
- Cover and cook on high for 4 hours. When it is done, shred the chicken with a fork. Serve Cafe Rio style with a freshly cooked tortilla, chopped lettuce, beans, cilantro lime rice, pico de gallo, tortilla strips and cilantro lime dressing. Enjoy!
