Sunburst Energy Smoothie Recipe

As parents, a common concern is if our kids are getting enough of the right nutrients.  When our kids say they are done eating after just a few bites it can be stressful!  There are a lot of reasons kids don’t eat what we want them to from texture issues, to varied taste preferences, and just plain old not being hungry at that particular meal.  Whatever the reason, we still worry about what our kids are eating, or not eating!  Smoothies are a great way to make up the difference of those time when they just won’t eat what is on their plate.  Smoothies are packed with nutrients, and for some kids it is easier to drink a smoothie packed with spinach than eat a bowl full!

This smoothie can be made with just the fruits, or for more nutrition, we added a big handful of spinach to half of it.  You literally can’t taste the spinach, but combining the green with the orange makes it a fun ‘twisted’ smoothie!

This Sunburst Energy Smoothie Recipe is not only totally tropical and delicious, but the ingredients are specifically chosen for both flavor and a boost of energy.

Pineapple:  Packed with vitamin C, not only is pineapple an immune booster, but it  is an excellent source the trace mineral manganese, which is an essential cofactor in a number of enzymes important in energy production and antioxidant defenses.

Mango:  We love frozen mango in our smoothies because it provides a rich sweet flavor and also thickens the texture making it smooth and creamy.

Chia Seeds: Chia is unique because both the gelling action of the seed, and it’s unique combination fiber combine to slow down your body’s conversion of starches into sugars. If you eat chia with a meal, it will help you turn your food into constant, steady energy rather than a series of ups and downs that wear you out.

Banana: We love bananas for their potassium and boost in energy that way.  Less commonly known is that bananas contain three different kinds of sugar. Glucose and fructose are quickly absorbed into the bloodstream, so they’ll give you an energy boost fast. Sucrose acts more slowly, so it keeps your blood sugar level stable and ensures you don’t suffer the crash that comes with other sweet treats.

If your kids are newer to smoothies and you think the green will freak them out, then just do the orange!

Sunburst Energy Smoothie Recipe

Serves: 16
  • 3/4 cup frozen pineapple cubes
  • 3/4 cup frozen mango cubes
  • 3/4 cup 100% orange juice
  • 1 banana
  • 1 Tbsp chia seeds
  • Big handful of spinach (optional - only add if you want to make it green)
  Blend together until smooth and creamy. To make half of it green: Pour half of the orange mixture into several glasses. Mix the remainder with a big handful of spinach. Blend until smooth. Pour over the orange mixture and serve!

My daughter and I had is similar smoothie this morningare ingredients were pineapple stead of mango we used cantaloupe, handful of spinach, 1 teaspoon of honey and instead of orange juice we use coconut water. Nutritious and it was delicious my daughter loved it so much he took it to go to school.

Is the pineapple fresh or from a can? And you didn’t mention anything about the spinach. Do you divide the already made mixture in half then add spinach? How much spinach? Please be specific.

We used frozen pineapple, but you can use fresh. If you end up using fresh, you may want to add some ice. I wouldn’t recommend pineapple from the can for this recipe, because I feel like the flavor is different. Please see the updated recipe 🙂

Yes! I actually added an entire orange to one of the test recipes when I was making this – including the peel. It tasted so fresh – but definitely a hint of the bitter peel, so not for the faint-hearted 🙂

Yes I buy fresh baby spinach leaves. I really like the organic pre-washed spinach that Costco sells.

I have found them at pretty much any grocery or health food store. They are becoming a lot more common now and I think a lot of stores stock them.

We think a high powered blender is a worthwhile investment and Amy and I both use ours everyday. I have a Blendtec and Amy has a Vitamix. They are both excellent blenders and you won’t go wrong with either!

A psychiatrist is a picshyian who specializes in the diagnosis and treatment of mental disorders. I have a bachelor’s degree in the social services field. For several years, I have worked with children who have been diagnosed with mental disorders. It is upsetting to see children victimize at an early age and even more disturbing to see them as predators as early as 5 years of age, however knowing that I am doing my part to assist them in becoming functioning youths and adults is rewarding. The empathy, confidentiality and maturity of a medical assistant are definitely needed in this area. I enjoy establishing a rapport with these clients and helping them to find adequate coping skills to deal with their disorders, therefore I would like to work for a psychiatrist.I would not like to work for an emergency picshyian for several reasons. I will explain a few. Patients who come to the emergency center typically have serious injuries or trauma. I would not like to have my mind constantly focused on who is coming thru the door and how sever the prognosis is. Knowing myself, I know that would be my focus and I would not be very productive. Also, in the emergency room the staff has to be prepared for anything, I would prefer an area that focuses on a particular specialty. Most importantly, I do not wish to see excessive amounts of blood loss on a regular basis. Actually, not even a minimal amount of blood loss on a regular basis. Giving my opinion and thoughts about this specialty, I would not be an effective employee.

I have found that frozen mango really thickens smoothies. I actually didn’t add any ice at all!

My 4 yo and I just made this…it’s soo good! I used a little bit of coconut water as well as the oj. It didn’t even need sweetener. I told him the spinach was green “sprinkles”. We’ll see how long he buys that. 😉

Yes – we love flax mill! I would add 1 Tbsp to start and go up from there. Probably not more than 3 Tbsp.
