Sweet and Savory Stop Lights

On Wednesday, for a healthy snack as I taught the Wolf Den we made these super yummy, sweet Stop lights. I got the recipe from a fun cookbook by LANA, a Preschool Nutrition character with a cookbook.

The kids loved this snack. The boys had several servings. And the cub scout leader told me her own kids have been begging to make them again.  This treat is:

  • 1 Graham Cracker
  • Cream cheese to spread
  • Strawberries, sliced
  • Apricots, halved
  • Kiwi, sliced.

Then, I started thinking of a way to make this with vegetables, and came up with this one:

We’ve got:

  • Celery: From Grimmway Farms*
  • Cream cheese (although wouldn’t laughing cow cheese taste amazing!!)
  • Red, yellow, and green bell peppers!

Simply spread cream cheese, or laughing cow cheese onto a stick of celery, cut into 3 inch stalks.  Cut circles out of peppers in all three colors.  Arrange your circles on the celery like a stop light!

I’ve never had much luck with cutting circles out of peppers, and then I saw a frosting tip (you know, frosting tip the metal Wilton tips. I used the backside as a cookie cutter, and the peppers cut out to be the perfect size, with a clean edge!

Then I poked a skewer into the bottom, although you don’t have to do this part, but it made it so we could stand it up.

My wife owns a web based business and is now spending every waking hour on the internet answering question and building her “business”, how can I get her back to doing fun things again and being “super healthy”?

For the gluten-free folks (like the idea of swapping celery for graham cracker) and the dairy-free folks, I recommend substituting Cedar’s Hummus (non-GMO brand) for the cream cheese! Love the cut-outs of colorful bell peppers! What a fantastic and fun idea for younger kids.
