Pumpkin Porridge

pumpkin oatmeal 2I attended a baking class at a local store several years back.  They were talking about breads.  They said their pumpkin bread didn't actually have any pumpkin in it at all! That by using pumpkin pie spice, they are able to achieve the TASTE of pumpkin bread, without actually using pumpkin.  What a missed opportunity!  Pumpkin is full of vitamins and minerals, and adding it increases the nutritional benefits of that food!  I was so disappointed! Even more reason to make your own...right?

Oatmeal is so versatile!  I've written several oatmeal posts.  But this one, just might be one of my favorites!

Pumpkin Oatmeal Recipe

  • 1/2 cup oats
  • 1 cup milk
  • 1/3 cup pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1-2 tsp honey
  • Walnuts (optional)

Place all ingredients except nuts in pot on stove top.  Cook over medium heat until all liquid is absorbed (about 5 minutes).   Garnish with walnuts.

Don't have any pumpkin pie spice?  Make your own and store in pantry:

Pumpkin Pie Spice Recipe

  • 1 TBL cinnamon
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tsp allspice

I love pumkin soups!! Do you recommend pumkin in a can or the real thing. I usually use it fresh but a lot of work!!!
