- 1 medium beet
- 1 cup hummus
- 2 medium cucumber
- 4 medium carrot
- Be sure you beet has been roasted and fully cooled ahead of time.
- Place beet into food processor and blend until smooth, and only small pieces remain. Add hummus and blend together to make pink!
- Cut vegetables and serve with hummus.
