- 1 medium cucumber
- 1 medium bell pepper, yellow
- 8 slice bread, whole wheat
- 4 slice turkey breast, deli style
- 1 cup spinach
- 2 cup pineapple
- 1 cup cranberries, dried
- 4 ounce cheddar cheese
Slice cucumbers into rounds, and slice pepper into strips.
Layer sandwich with a serving of turkey, spinach leaves, sliced pepper and cucumber. Mix pineapple chunks with cranberries. Serve sandwich with fruit and cheese cubes.
