Cinnamon Toast Muffins

  • 1 1/2 cup flour, whole wheat
  • 1 cup oats, dry
  • 1/3 cup sugar
  • 3 teaspoon baking powder
  • 2 tablespoon flaxseed, ground
  • 1 cup soy milk
  • 1 large egg
  • 1/4 cup olive oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 teaspoon sugar


  • Mix all dry ingredients together in a bowl. In a separate bowl combine the wet ingredients  Mix all ingredients til moistened.
  • Fill muffin cups 3/4 of the way full. Sprinkle a generous amount of cinnamon sugar on top of each muffin. Bake in 400 oven for 12 minutes or until cooked through.
