Ingredients
- 1 none cooking spray
- 2 medium banana
- 1 1/2 cup blueberries, frozen
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 cup almond milk, unsweetened
- 1/4 cup honey
- 1 cup oats, dry
- 1/4 cup, sliced ALMONDS
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/8 tsp salt
Instructions
- Heat oven to 375°F. Spray a small baking dish (about 1.5 quarts) with cooking spray.
- Slice bananas and place them along the bottom of the baking dish. Sprinkle with 1 cup of berries.
- In a small bowl, whisk together egg, vanilla and almond extract, milk and honey. Set aside.
- In a separate bowl, mix the oats, almonds, baking powder, cinnamon and salt. Sprinkle mixture over berries and bananas. Pour liquid over the oats and sprinkle with remaining berries.
- Bake in preheated oven for 30 minutes, or until the oats have softened and become browned. Serve warm.
