Avocado Boats


Good morning! This morning we visit another healthy food that begins with the letter A: Avocados!  Avocados are a great addition to a healthy diet. They provide heart healthy fats, fiber, antioxidants, and essential nutrients.  I have only begun to love avocados in the last few years, and now I can’t get enough of them.  My kids love avocados in bean dips and salads.  I love them straight out of the peel.

Today’s food idea is supposed to look like a boat.  The Avocado skin was perfect for this.

Avocado Boats!

We took:

  • One whole avocado
  • 1 TBL salsa
  • 1 tsp. light sour cream
  • 1/2 tsp. lemon juice

Sliced avocado length wise.  Scooped out flesh. Put all ingredients into a food processor and whipped it up. Returned flesh to scooped out avocado.

Our other favorite avocado snack is the Avocado cones.

Yea Amy! Congrats! I don’t care for avocado but I think its because I don’t know how to pick one out. I love guacamole but mine never tastes like the restaurant version. It is just not something I know what to do with but I have been seeing a lot about it lately and think I may get brave and buy one at the store next week.

Morgan, guacamole was my gateway to liking avocado too. It started as a great chip dip. Then I started mashing avocados and using it as a spread on my sandwiches, then I started chopping and adding to my eggs. Now, I just scoop it out and eat it. It took some time, and now I have to stop myself from overeating them! BE BRAVE!!

I grew up eating avacodo with a lot of our meals – especially for breakfast. There would be slices on a plate on the lazy susan to eat with our scrambled eggs (sometimes chorizo) and cheesy refried beans. We have Mexican heritage – so it came naturally. Perhaps not the healthiest – but one of my favorite ways to eat it is inside a burrito or out of the skin with just a small sprinkle of salt. That’s how my mom always eats it. Great recipe!
