Ingredients

    Sauce:
    • 1 cup – milk
    • 6 wedge yields – Laughing Cow cheese
    • 1 teaspoon – garlic powder
    • 1 tablespoon – Parmesan cheese, grated
    • 1 tablespoon – butter, unsalted
    • 1/8 teaspoon – salt
    • 1/8 teaspoon – black pepper, ground
    Pasta
    • 8 ounce – penne pasta, dry
    Salad:
    • 4 cup – lettuce, shredded
    • 2 cup – spinach
    • 1 medium – tomato, red
    • 1/2 medium – cucumber
    • 1 cup – broccoli, florets
    Serve With:
    • 2 cup – grapes

    Directions

    1. In a medium-sized saucepan over medium heat, whisk the sauce ingredients until everything is melted and the sauce is velvety smooth; about 20 minutes. 
    2. While sauce is melting, cook pasta according to package directions and prepare side salad by chopping all veggies into smaller, bite-sized pieces.
    3. Serve sauce immediately over warm pasta with side salad and grapes. (Serving size: 1 cup pasta, 1 1/2 cup salad, 1/2 cup grapes)
    Feel free to serve your family's favorite dressing with the salad. Or, for a lighter alternative, serve with a drizzle of olive oil, vinegar, and a dash of salt and pepper. Note: Use garlic and herb Laughing Cow cheese for additional flavor.  Add your own dressing of choice to your salad.
