Coconut Island Overnight Oats

  • 2 cup oats, dry
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tablespoon maple syrup, pure


  • 1 cup coconut flakes
  • 1/2 cup almonds, sliced
  • 1 medium banana


  • Add oats to a large bowl and mix with milk, water, and maple syrup.
  • Equally divide mixture among 4 sealable containers (canning jars work great!); cover and refrigerate overnight.
  • In the morning, give the oats a stir, then top with coconut flakes, almonds, and banana slices. Add additional syrup to taste if desired.
