Chopped Salad for Kids
Some kids can’t get enough salad and others run in the opposite direction. Chopped salad is a great solution because you can mismatch ingredients as you please for your kiddo’s taste buds and when it’s all chopped up it’s easier for them to eat! They can even eat it with a spoon! Feel free to add in nuts, chicken, swap out the cheese for different type or add spinach! This Chopped Kale Salad is made to be messed with!

Dress (your Salad) for Success
This salad has a super simple lemon dressing. I didn’t even mix it up in a separate bowl I just added each ingredient to the salad and tossed it well. Taste as you go! If you’re serving this for your kids you’ll want to go easy on the garlic, but if you’re making it just for you up the ante. If you don’t have a lemon, don’t worry! You can leave it out and it will still be delicious! The avocados will start to break down a little bit and become part of the dressing, which is amazing! My only major dressing advice is to not over dress it!

The Secret to Kale Salads
Have you ever had a kale salad at a restaurant and though “Wow, this is pretty good!” But then you go home and make a kale salad and it tastes rough, tough and not at all like the restaurant’s? Well it’s because the restaurants know how to treat their kale! Kale needs a massage! That sounds crazy I know. Prep your kale. Wash and remove the stalk and then chop. Place in a bowl to massage it! Just reach in, take a big handful and squeeze. keep doing this to all the kale until it’s darker in color and not as tough! Tah-dah! You’re now a kale wizard!

Chopped Kale Salad
Ingredients
- 2 cup, chopped kale
- 1 cup cherry tomatoes
- 1 cup slices cucumber
- 1 cup mozzarella cheese
- 1 medium avocado
- 1/4 cup, chopped onion, red
- 1 1/2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
Instructions
- Chop all vegetables and cheese to desired size.
- Add all veggies and cheese to a large bowl.
- Add olive oil, fresh lemon juice and garlic powder (you can add any salt and pepper you may want now). Toss salad and taste. Adjust as needed with more garlic powder, lemon juice, salt and pepper.
- Serve!
