Blackberry & Sage Spritzer

Our Blackberry & Sage Spritzer combines the tart sweetness of blackberries with the subtle herbal notes of sage, all topped with sparkling water for a light and festive beverage. It makes the perfect addition to any brunch or holiday meal!
Course: Drinks
Servings: 10

Ingredients

  • 1/2 cup honey
  • 1/2 cup water
  • 4 sage leaves fresh
  • 1 lb blackberries fresh or frozen
  • sparkling water
  • additional fresh blackberries and sage leaves for garnish, if desired

Instructions

  • In a small saucepan, combine the honey and water. Heat over medium high until the mixture just starts to come to a boil. Remove from heat.
  • Stir in the sage leaves and blackberries. Allow to sit in the hot honey mixture, stirring occasionally, until completely cooled and the berries start to break down.
  • Once cooled, place the mixture in a blender and puree until combined. Pour the mixture into a jar over a fine mesh sieve to remove any remaining seeds.
  • To make the spritzer, fill a glass with ice. Add 2-3 tablespoons of the syrup depending on how sweet you want your drink. Top with sparkling water and stir. Garnish with fresh blackberries and sage leaves if desired. Enjoy!

Notes

The syrup can be made a day ahead and stored in the refrigerator for up to a week.
