Appetizer Sample Platter with Turkey Power Balls!

Do you have any exciting new years eve celebrations planned? In all honesty, I don't believe I've stayed up till midnight on New Years Eve since my early college years (about 20 years!).  Is that sad?  Every single night, at about 9pm, no matter what I'm doing, I fall asleep.  To stay up till midnight, would literally be impossible for me.  My kids must come from another mother, because they want to stay up tonight!  Ha ha.. we'll see if I can handle it.  

Whether you are up till midnight, or just have some early celebrations like me, arranging a power platter full of nutrient dense foods is the best way to ring in the new year!  We've got:

To turn regular old turkey meat balls into POWERBALLS, we had to add vegetables!  We literally took a sampling of veggies from our fridge that was on it's last few days, and put them into a food processor.  We used mushrooms, spinach, carrots, broccoli and an onion:

Then, mixed the veggies with some ground turkey, and cooked the meatballs in the oven until they were browned and cooked all the way through.  What you get: Turkey PowerBalls!

You can serve with marinara sauce for dipping, and you'll get extra vitamin A!

So bottom line! Stay home tonight and re-create your own, healthy restaurant experience with your family.  Bring out the appetizer platter, and let your kids sample some healthy super foods instead!

Appetizer Sample Platter with Turkey Power Balls!


Instructions

Turkey Power Balls

  • 1 lb ground turkey
  • 1 cup pureed veggies (a mixture of broccoli, carrots, onion, spinach, and mushrooms).  
  • 1/2 cup dried bread crumbs
  • 1 egg
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Take a few broccoli crowns, a quarter of an onion, about 6 baby carrots, a few spinach leaves, and a few sliced mushrooms.  Chop until they fit well into your food processor.  Process them until they are well incorporated and chopped.  

Combine ground turkey, the veggies, bread crumbs, egg, and spices into a bowl.  Shape meatballs with your mixture and arrange on a baking dish.  Bake at 400 degrees for about 15 minutes.

Would it be possible to make vegetarian versions of these or do you think the kids would dislike the veggie taste?

I haven't tried it, but I get you could make some with some chickpeas that would probably be good!

Can you freeze them? And how would you thaw them? (Sorry, new to the kitchen!)

You can freeze them. To thaw, I would set in the fridge for a few hours before you want to eat them, and then bake them in the oven until they are heated throughout. 400 degrees at 15 minutes should do it again.

Do you think it is possible to sub the breadcrumbs for brown rice? or some other bread substitute?

Rae- It's definitely worth a try! I've never tried it, but brown rice would be similar to some "Porcupine meatballs" we make, which we LOVE!
