Healthy Macaroni and Cheese
  • 3 TBLS Olive Oil
  • 3 TBL flour

In sauce pan, stir olive oil and flour constantly till thickens. Then add

  • 12 oz can evaporated milk
  • 1/2 cup squash puree (I used yellow squash)
  • 1 tsp salt
  • 1/2 cup cheese (I use colby Jack)

Stir all ingredients over medium heat until sauce thickens.

In the meantime cook 3 cups macaroni noodles.

Combine. Let sit for 5 minutes to thicken up.
