- 1 1/2 Cups whole wheat flour
- 1 Cup Rolled Oats
- 1/3 Cup Sugar
- 1 TBL baking powder
- 2 TBL Ground flax seeds (optional)
In a seperate bowl, combine following wet ingredients
- 1 cup soy milk (or low fat milk)
- 1 egg
- 1/4 cup canola oil
- 1 tsp vanilla
Mix all ingredients til moistened. Fill muffin cups 3/4 of the way full. Sprinkle a generous amount of cinnamon sugar on top of each muffin. Bake in 400 oven for 12 minutes or until cooked through.
Makes 12 muffins
