- 2 medium tomato, red
- 1/2 medium bell pepper, red
- 1/4 medium onion, red
- 1/4 cup chopped parsley, fresh
- 4 tablespoon olive oil
- 2 teaspoon basil, dried
- 2 tablespoon vinegar, red wine
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper, ground
- 2 cup White Kidney Beans
- 12 leaf outer lettuce
Chop tomato, bell pepper, red onion, and parsley.
Carefully mix all ingredients except lettuce in a glass or plastic bowl.
Cover and refrigerate at least 2 hours to blend flavors.
Serve on lettuce with baked tortilla chips.
