Make it sweet or make it sour, either way, you’ll love our Easy Cucumber Avocado Salad!
Our toddler loves to nosh on crunchy fruits and vegetables. We love having fresh produce cut up and ready, but sometimes she gets bored eating them on their own. That’s when we like to make salads. Sometimes just having a different dressing, sauce or glaze on veggies helps kids want to try things they maybe haven’t liked in the past.
As my husband cuts up the veggies, my toddler sneaks in some to snack on. Her favorite way to enjoy cucumbers is plain or this Easy Cucumber Avocado Salad. It’s a simple recipe and you most likely have all the ingredients on hand. We like to enjoy ours with fresh sliced red onions, but to make it kid friendly we use freeze dried red onions that you can find at your local store in the produce section. The cucumber peel is nutritious (always get it organic!) so we like to take a little off and keep a little on. It also changes the way the cucumbers look and mixing it up is a great way to get kids to try veggies!
If you don’t like the slices, you could easily make it into small chunks. Cucumber season is coming soon we can’t wait to make this regularly with our market fresh cucumbers. If you like your cucumber salad a little sweeter you could add in a little bit of a sweetener like cane sugar or honey. If you like it creamier, you could easily mash up one avocado with a little olive oil and the lime juice to coat it, instead of the lime juice alone.
We like to use whatever fresh herbs we have in the house and today we had parsley, but you could also use cilantro, it goes really well with all the flavors in this recipe. There’s really no wrong way to enjoy your fresh fruits and vegetables, but this is definitely a delicious recipe that the whole family will enjoy!

- 1 cucumber, sliced peel some of the cucumber, but remember it has tons of fiber, vitamins and minerals!
- 1 avocado, chopped
- 1 teaspoon freeze dried onion
- 1/4 cup lime juice
- 1 teaspoon chopped parsley
- pinch of salt
- Mix ingredients together in a large bowl.
- Enjoy right away or allow flavors to meld together 2 hours in the refrigerator.
