We had a whirlwind of Christmas parties this weekend, that was accompanied by a lot of snow! We love it on one hand, but my poor nephew got hit by a sliding car on his way to our family Christmas party last night! Everyone was fine, but the cars are totaled! Although we did go to our family party last night, if we can stay home and drink hot cocoa during a snow storm, we do!
So, yesterday afternoon, when things were quiet for just a second, we mixed up some warm chocolate milk, with a touch of pumpkin flavoring for a change. It was the perfect thing for a winter day!
Why Pumpkin? Well, we had some leftover from mixing our pumpkin with applesauce. And, we love pumpkin! Anytime I can add a little bit to my kids meals this fall, I do! Pumpkin is a great source of:
- Vitamin C
- Vitamin A
- and even Fiber!
So, while we didn’t add much of the pumpkin to our cocoa, it makes me feel like my kids are getting a mini vitamin dose from drinking their pumpkin. I found a recipe we wanted to adapt from Allrecipes. And, we got to work.
We used (for my family of 5):
- 4 cups milk
- 4 Tablespoons honey
- 4 Tablespoons Cocoa powder
- 4 Tablespoons Pumpkin puree
- 4 teaspoons of pumpkin pie spice (If you don’t have any, you can make it- recipe here!)
Then, we made some homemade whipping cream for the top. 1 cup of heavy whipping cream, and 3 tablespoons of sugar. (this part is obviously optional, but my kids loved piping the cream onto their drinks, and it’s better than the canned kind you can get at the store!)
And there you have it! Delicious Hot Pumpkin Cocoa!
