How to make cucumber roll-ups
What you’ll need:
- 1 cucumber
- a vegetable peeler
- 4 ounces cream cheese, softened to room temperature
- 1/2 cup of matchstick carrots
- a bell pepper (or two, if you want varied colors)
- some optional herbs
First, make sure to give your produce a good rinse and dry. Cut the cucumber into thin strips using a vegetable peeler. I recommend getting the thinnest cucumber because it will be easier to slice with the peeler in the center. But even if the cucumber you pick is too thick for the peeler to handle, just shimmy off what you can.
Soften the cream cheese by leaving it out for a few hours until it’s about room temperature. Gently spread a thin layer of the cream cheese over each of the cucumber slices. It’s a little awkward to spread since the cucumber is wet and the cream cheese is slick, but just try and slather some on.
Slice half a bell pepper into thin matchsticks. I used a quarter each of a red and yellow bell pepper for extra color. You’re also welcome to cut your own matchstick carrots, but let’s be real – that is a hassle! Buying a bag is much easier, and I like having them on hand for salads and snacking.
Now place a mix of matchstick carrots and bell pepper sticks at one end of each cucumber slice. If desired, sprinkle some fresh herbs in there as well – dill or parsley work nicely. Once filled to your desired amount, roll. The cream cheese works nicely as a binder to keep everything together.
Serve these veggie bites cold. Enjoy these fresh, crunchy cucumber roll-ups at your next get together.

This appetizer looks beautiful and tasty! I would like to try one. Thanks!
That looks delicious although id eat them without the cream cheese. My kiddos would never touch them unfortunately. Ive tried serving cucumbers, sweet peppers, etc and all they’ll eat is cold carrots! Grrr – but Id love them!
Without the cream cheese, you could try hummus if you like! I thought about using hummus and want to try it next time. Hope you love them – and just keep up the good work, your kids will come around eventually!
This looks delicious???
How refreshing! These seem like the perfect summer snack, saving it for my next dinner party!

What is a serving size for the calories given?
Hi Elaine! This should make around 6-8 cucumber rolls. Let us know if you get more or less if you try it!
These look so delicious! I just made a batch for after-school snacks today.
Overall they turned out great. (I definitely had to taste test a few!) I’m glad that I had an extra cucumber on hand. Because even with the English/hothouse cucumbers, the center slices had too much seedy membrane type flesh to hold together.
So, really I could only use the outer slices. I tried making half-width rolls with the center slices, but that didn’t work out so well. lol Not a big deal, just got fewer slices from each cucumber than I expected.
Also, I put the cream cheese in a piping bag and just squeezed a line on each cucumber slice. 🙂
Made these when asked to bring a veggie tray to a party. They were a huge hit. Used the baggie idea to put the cream cheese on the cukes. Also,I added ranch dressing to the cream cheese. Thanks for this creative presentation idea!
I’m so glad it was a hit! Thanks for sharing, Marcel.
