Amy Roskelley

Hi! I'm Amy!  I live with my husband and kids in the beautiful state of Utah.  My kids are Nate: 15 years old, Erica, 13 years old, and TJ 11!  While most of my time is spent online behind this computer while my  kids are at school, the rest of the time you can find us hiking the amazing mountains of Utah, running in the streets or at races, or in the kitchen, baking up some homemade treats, bread, or making up new recipes.  Wade, my handsome husband, is a registered nurse at our state prison.  He loves what he does, and I love that I never have to look at my children's gaping wounds!

I graduated from BYU in Health Education in 1998 and spent 10 years working at the Utah State Department of Health, counseling state employees on ways to improve their cholesterol, body fat, blood pressure, and blood sugar.  I then moved over to a program called Gold Medal Schools, which works with elementary schools directly to implement health programs and policies for the students.  Just before leaving the health department I developed the Healthy Habits plate and started this blog as a way to help parents feed their kids in a simple and practical way.

Are your kids picky eaters? They used to be!  When I started this blog in Sept. 2007, they were extremely picky.  I was careful to only prepare meals I knew they would eat and wouldn't cause any significant fighting at the dinner table.  However, blogging about new and healthy food has changed their palates.  In being persistent for over 5 years, they will try almost everything I make.

Natalie Monson

I grew up in Utah and love it so much that have stayed and started my family here!  My husband and I love southern Utah because of all the amazing places to go hiking and canyoneering.  We love to run races, travel, and my biggest passion is gardening. I graduated from Brigham Young University in Dietetics and then completed my accredited internship at Utah State University to become a Registered Dietitian.  We have two girls, Amelia (4) and Sophie (2) who are my test subjects to all the crazy recipes we come up with!

I have always loved food and nutrition and have worked in a variety of areas of nutrition.  My parents both grew up on farms in Idaho and so my family's eating habits growing up were definitely influenced by the whole foods mentality.  Since having my own children I have realized the importance of teaching good nutrition habits young, while also making eating healthy a good experience for children.

Are your kids picky eaters? For the most part definitely not.  My 2 year old will literally eat anything - even raw onions (weird). Because I started so young with them I don't think they even realize there is another way of eating.  There are certain foods they don't like, but to me that is ok!  Growing a garden has been a huge help in developing their love for fruits and vegetables.

Jackie Vega

Jackie is a registered dietitian and ACE certified personal trainer.  She is married with two children, ages five and seven, and her busy family and entrepreneurial life has drawn her specialties towards pre/postnatal, children and families and mentoring mommies and mommies-to-be towards fit, healthy pregnancies and achieving that pre-baby physique!

Even with a background in fitness and nutrition, I do have the challenges of feeding two opposite children in regards to food preferences.  It has also taken me the full 12 years of married life, to get my husband to enjoy a life of healthy food choices.  That was not an easy task but a lot of fun playing around with his family heritage recipe make-overs!  I live by offering foods they all like, and sprinkle in the new foods whenever and wherever I can.  My children’s favorite way to try new foods is during our special at-home movie night dinners and they always love having a candlelit dinner in the dining room!  I am not a big fan of hiding food so they are fully aware of what they are eating, and they are always willing to give the new food a try again when I serve it later in the week or month.  Jackie also maintains the site:  Real Food Tower Garden, and is a distributor of Juice Plus (Great for kids!)

My name is Malissa Duckworth. I am 28 years old, and I live in a small town in Illinois about 20 minutes from downtown St. Louis. In 2010 I graduated with my BA in Religious Studies from Regent University, and I am currently working at a local bank as a part-time file clerk. My husband, Kody, and I have been married for 8 years, and most of my time is spent at home taking care of and homeschooling our three small children: ages 5, 3, and 1. In our free time, we really enjoy visiting with friends and family and are also involved in several different ministries/outreaches through our local church. I enjoy cooking and am always looking for new, healthy foods/recipes for us to try. I am SO happy to have found Super Healthy Kids and am thrilled to be a part of the team!
