Preheat oven to 350°F and line baking sheets with parchment paper.
In a bowl, whisk together the flour, cornstarch, baking soda, and salt.
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar. Mix until smooth. Add the eggs and vanilla and whisk until fully combined.
Add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chunks and caramel chips.
Scoop dough into balls (about 2 tablespoons each) and place on baking sheet.
Bake for 10–12 minutes, until the edges are golden but centers are still soft.
Immediately sprinkle cookies with flaky sea salt. Let cool slightly before serving. Enjoy!!
