Combine all ingredients in a medium saucepan over medium heat.
Stir occasionally as the sugar dissolves and the pears release their juices.
Continue cooking until the mixture becomes thick and syrupy and the pears are soft-- about 1 to 1 1/2 hours, depending on your fruit and the stove temperature.
Adjust sugar and seasoning to taste. Let cool completely, then transfer to jars or airtight containers.
Store in the refrigerator or freeze until ready to use.
