Tropical Fruit Crepes

These Tropical Fruit Crepes are thin, tender, and filled with a colorful combination of tropical fruits! The simple batter comes together in a blender, and each crepe cooks in just a couple of minutes.

Tropical Fruit Filling

  • 1 mango peeled and diced
  • 2 kiwis, peeled and diced peeled and diced
  • 1 cup diced fresh pineapple
  • 1/2 cup diced dragon fruit
  • 1/2 cup fresh blueberries
  • 1 tsp fresh lime juice
  • Honey, powdered sugar, whipped cream, additional fresh fruit, and lime zest optional, for serving

Instructions

  • Add the flour, eggs, milk, honey, vanilla, melted butter, and salt to a blender.
  • Blend for 20–30 seconds, or until the batter is smooth and no lumps remain.
  • Allow the batter to rest for 10–15 minutes. This gives the flour time to absorb the liquid and helps create soft, flexible crepes.
  • While the batter rests, combine the kiwi, pineapple, dragon fruit, and blueberries in a medium bowl. Drizzle with lime juice, if using, and toss gently to combine.
  • Heat an 8- or 10-inch nonstick skillet over medium heat. Lightly coat the pan with butter.
  • Pour about 1/4 cup of batter into the center of the skillet. Immediately lift and rotate the skillet so the batter spreads into a thin, even circle.
  • Cook the crepe for 1–2 minutes, or until the surface looks set and the edges begin to lift away from the pan.
  • Carefully flip the crepe with a thin spatula. Cook for another 20–30 seconds, or until lightly golden.
  • Transfer the cooked crepe to a plate. Repeat with the remaining batter, lightly buttering the skillet as needed. Stack the crepes on the plate and cover them with a clean kitchen towel to keep them soft.
  • Spoon the tropical fruit mixture down the center of each crepe. Fold the sides over the filling or fold each crepe into quarters.
  • Top with honey, powdered sugar and/or whipped cream. Serve immediately.
