  • Preheat the oven to 375° F.
  • In a large bowl whisk together the dry ingredients. Sprinkle the cold butter cubes over the flour mixture. Using a pastry cutter (or your hands) cut in the butter until combined and you have very small pieces.
  • Slowly add the buttermilk, gently stirring to work it in. After a dough begins to form, use your hands to knead in the buttermilk until it comes together. The dough shouldn’t be too sticky.
  • Turn out the dough onto the counter and gently knead in the currants, working it as little as possible to avoid getting a tough dough.
  • Shape into a round loaf and make a criss cross cut on the top of the dough, about ½ inch deep.
  • Place in a cast iron skillet or on a parchment lined baking sheet, and bake in a preheated oven for 45-50 minutes or until a wooden skewer comes out clean. Do not overbake!
