Skip the yeast! This Easy Healthy Irish Soda Bread is a 1-hour, kid-friendly loaf perfect for St. Patrick’s Day or a cozy dinner. Simple, rustic, and delicious!
In a large bowl whisk together the dry ingredients. Sprinkle the cold butter cubes over the flour mixture. Using a pastry cutter (or your hands) cut in the butter until combined and you have very small pieces.
Slowly add the buttermilk, gently stirring to work it in. After a dough begins to form, use your hands to knead in the buttermilk until it comes together. The dough shouldn’t be too sticky.
Turn out the dough onto the counter and gently knead in the currants, working it as little as possible to avoid getting a tough dough.
Shape into a round loaf and make a criss cross cut on the top of the dough, about ½ inch deep.
Place in a cast iron skillet or on a parchment lined baking sheet, and bake in a preheated oven for 45-50 minutes or until a wooden skewer comes out clean. Do not overbake!
