Teriyaki Chicken and Bowtie Pasta Salad

This Teriyaki Chicken and Bowtie Pasta Salad is a go-to favorite. It's colorful, crunchy, slightly sweet, and full of nourishing ingredients that kids and grownups alike keep coming back for.

Ingredients

  • 16 oz bowtie pasta
  • 1/2 cup Soy Vay Very Very Teriyaki Sauce no substitutes!
  • 16-24 oz fresh spinach
  • 3/4 cup chow mein noodles La Choy brand is my favorite
  • 3/4 cup dried cranberries
  • 1-2 cups rotisserie or grilled chicken cubed

Dressing

Instructions

  • Cook the pasta according to package directions. Place the drained pasta in a gallon-size ziplock bag. Pour 1/2 cup of the teriyaki sauce over the pasta and gently toss until all the noodles are covered. Seal the bag and lay flat in the refrigerator for three hours or overnight, turning halfway through.
  • Mix the dressing ingredients together in a glass jar. Securely tighten a lid on the jar and shake vigorously to combine.
  • Layer all of the ingredients (except the chow mein noodles) together in a large bowl or platter.
  • Just before you are ready to serve, pour 3/4 of the dressing over the salad and toss to combine. Add the chow mein noodles and give it another toss.
  • Add more dressing if desired. Serve immediately and enjoy!

Notes

  • The brand of teriyaki sauce DOES make a difference for this recipe.  I strongly recommend you use the brand included above. 
  • Mandarin oranges can be added, but they tend to dominate the flavor, so use sparingly.  
  • Craisins can be optional.  Substitute with raisins, golden raisins, or mandarin oranges. Or, just omit.
