Strawberry Rice Krispie Treats

These Strawberry Rice Krispie Treats are soft, chewy, and perfectly pink—making them an ideal treat for Valentine's Day, birthdays, classroom parties, or anytime you want a fun no-bake dessert.

Ingredients

  • 6 cups Rice Krispies cereal
  • 8 cups mini marshmallows divided
  • 1 1/2 oz strawberry gelatin mix about half of a 3-oz box
  • 1/2 cup butter or margarine
  • 1 tsp vanilla extract

Instructions

  • Melt the butter: In a large saucepan over low–medium heat, melt the butter completely.
  • Add marshmallows: Add a heaping 5 cups of marshmallows and let them sit for about 30 seconds, stirring gently.
  • Flavor the mixture: Add vanilla extract and gently stir. Sprinkle in the strawberry gelatin mix and stir gently again.
    Gentle stirring is key—overmixing leads to tough treats.
  • Finish melting off heat: Remove the pan from heat while marshmallows are partially melted. Continue stirring off the burner until mostly smooth.
  • Add cereal: Gently fold in the Rice Krispies and the rest of the marshmallows until evenly coated.
  • Press into pan: Transfer mixture to a greased 9×13-inch pan. Lightly press down using buttered hands—don’t pack it tightly!
  • Cool & cut: Allow to cool before cutting and decorating.
