Instructions

  • In a small bowl, stir together mayonnaise or Greek yogurt, ketchup, mustard, chopped pickles, pickle juice if using, garlic powder, and paprika.
Set aside while you make the tacos.
  • In a medium bowl, gently mix the ground beef or turkey with salt, pepper, garlic powder, and onion powder.
Divide the meat into 8 equal portions.
  • Place one portion of meat onto each tortilla. Use clean hands or a spatula to press the meat into a very thin, even layer that reaches close to the edges of the tortilla.
The thinner the meat, the crispier and more smash burger-style the taco will be.
  • Heat a large skillet or griddle over medium-high heat.
Place one tortilla meat-side down in the hot skillet. Press firmly with a spatula and cook for 2–3 minutes, until the meat is browned and cooked through.
Flip the tortilla so the tortilla side is down. Add a slice of cheese over the cooked meat and cook for another 1–2 minutes, until the tortilla is golden and the cheese melts.
    Repeat with the remaining tacos.
  • Top each smash burger taco with shredded lettuce, pickles, onion if using, and a drizzle of burger sauce.
    Fold and serve warm.
