These fun and delicious Smash Burger Tacos have all the flavor of a classic cheeseburger with the crispy edges of a smash burger and the easy handheld shape of a taco.

In a small bowl, stir together mayonnaise or Greek yogurt, ketchup, mustard, chopped pickles, pickle juice if using, garlic powder, and paprika.Set aside while you make the tacos.
In a medium bowl, gently mix the ground beef or turkey with salt, pepper, garlic powder, and onion powder.Divide the meat into 8 equal portions.
Place one portion of meat onto each tortilla. Use clean hands or a spatula to press the meat into a very thin, even layer that reaches close to the edges of the tortilla.The thinner the meat, the crispier and more smash burger-style the taco will be.
Heat a large skillet or griddle over medium-high heat.Place one tortilla meat-side down in the hot skillet. Press firmly with a spatula and cook for 2–3 minutes, until the meat is browned and cooked through.Flip the tortilla so the tortilla side is down. Add a slice of cheese over the cooked meat and cook for another 1–2 minutes, until the tortilla is golden and the cheese melts.Repeat with the remaining tacos.
Top each smash burger taco with shredded lettuce, pickles, onion if using, and a drizzle of burger sauce.Fold and serve warm.
