Salted Double Chocolate Chip Cookies

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until light and creamy.
    Add the egg and vanilla extract, then mix until smooth.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and kosher salt.
  • Add the dry ingredients to the wet ingredients and mix just until combined. The dough will be thick and chocolatey.
    Fold in the chocolate chips.
  • Scoop the dough into 1½-tablespoon portions and place them on the prepared baking sheet, leaving about 2 inches between each cookie.
    Press a few extra chocolate chips on top of each dough ball if desired.
  • Bake for 9–11 minutes, or until the edges are set but the centers still look slightly soft.
    Do not overbake. The cookies will continue to set as they cool.
  • As soon as the cookies come out of the oven, sprinkle each one with a small pinch of flaky sea salt.
    Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
