Roasted Brussels Sprouts with Bacon and Blue Cheese

Tender, golden brown sprouts are paired with crispy turkey bacon and tangy blue cheese crumbles for a side dish that's savory, satisfying, and unexpectedly kid-approved!

Ingredients

  • 2 lbs fresh brussels sprouts
  • 2-3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup turkey bacon cooked and diced
  • 1/3 cup blue cheese crumbles or feta cheese for a milder option
  • 1/4 cup blue cheese dressing optional, for drizzle

Instructions

  • Wash and trim the brussels sprouts. Halve or quarter them to keep pieces a similar size for even cooking.
  • Place sprouts in a large bowl or ziplock bag. Drizzle with oil and sprinkle with salt and pepper. Toss to coat evenly.
  • Spread sprouts out onto a parchment or silicone lined baking sheet. Arrange cut side down for crispier edges.
  • Roast at 425 degrees for 25-30 minutes or until golden and tender, stirring once.
  • While sprouts are roasting, cook and dice the bacon.
  • Place the roasted sprouts into a serving bowl and top with diced bacon and blue cheese crumbles.
  • Drizzle with blue cheese dressing or greek yogurt for extra creaminess. Enjoy!
