Green Pancakes

A colorful twist on a hot breakfast classic, these fluffy, honey-sweet pancakes are especially welcome on Halloween and St. Patrick's day.

  • 1 cup spinach
  • 1 cup buttermilk
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 cup flour, whole wheat
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon coconut oil
  • 1 1/3 cup butter, unsalted
  • 1/4 cup maple syrup, pure

Serve With


    • Add spinach, buttermilk, egg, oil and honey to a blender, and blend until smooth.
    • In a medium bowl, mix the flour, baking powder, baking soda and salt. Add buttermilk mixture and stir until just combined. Do not over-mix; a few lumps should remain.
    • Heat 1 tablespoon of coconut oil on a large skillet or griddle over medium. Pour batter by the tablespoon, and cook for 2 minutes or until bubbles appear. Flip and cook for 1-2 minutes longer; both sides should be slightly brown.
    • Top with butter and maple syrup; serve with grapes - green if you have them!
