In a medium saucepan, combine the rice, broth, olive oil, turmeric, garlic powder, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15–18 minutes or until rice is tender. Fluff with a fork.
Heat olive oil in a large skillet over medium heat. Add ground pork and cook for 5–7 minutes, breaking it apart until browned and fully cooked.
Stir in garlic, green onions, soy sauce, and sesame oil (if using). Cook for 1–2 minutes until fragrant.
Add chopped kale and cook for 3–5 minutes until wilted and tender. Season with salt and pepper to taste.
Divide yellow rice into bowls. Top with pork and kale mixture. Sprinkle with additional sliced green onions if desired. Serve warm.
