Instructions

  • In a medium saucepan, combine the rice, broth, olive oil, turmeric, garlic powder, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15–18 minutes or until rice is tender. Fluff with a fork.
  • Heat olive oil in a large skillet over medium heat. Add ground pork and cook for 5–7 minutes, breaking it apart until browned and fully cooked.
  • Stir in garlic, green onions, soy sauce, and sesame oil (if using). Cook for 1–2 minutes until fragrant.
  • Add chopped kale and cook for 3–5 minutes until wilted and tender. Season with salt and pepper to taste.
  • Divide yellow rice into bowls. Top with pork and kale mixture. Sprinkle with additional sliced green onions if desired. Serve warm.
