In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla. Pour wet ingredients into dry ingredients and stir gently until just combined.
Heat a nonstick skillet or griddle over medium heat. Pour ¼ cup batter for each pancake and cook until bubbles form on top. Flip and cook another 1–2 minutes until golden brown. Repeat with remaining batter.
Cook bacon until crispy in a skillet, oven, or air fryer. Transfer to a paper towel-lined plate.
Assemble the Snack Board: Arrange pancakes in the center of a large serving board or platter.
Add the bacon, fresh berries, banana slices, bowls of whipped cream, sprinkles, chocolate chips, and maple syrup around the board. Serve immediately.
