Ingredients

  • 1 cup raw nuts almonds, cashews, or a mix
  • 1 cup pitted Medjool dates
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp dried blueberries or freeze-dried blueberries
  • 1-2 tsp acai powder
  • 1 tbsp chia seeds optional
  • 1 tbsp coconut oil optional, for smoother texture
  • 1-2 tbsp water as needed for blending
  • Pinch of salt

Instructions

  • Add nuts to a food processor and pulse until they form a coarse, crumbly texture.
  • Add dates, coconut flakes, blueberries, acai powder, chia seeds, coconut oil, and salt. Blend until the mixture becomes sticky and holds together when pressed.
  • If the mixture feels too dry, add water 1 tablespoon at a time until it sticks together easily.
  • Scoop about 1 tablespoon of mixture and roll into balls. Place on a plate or tray.
  • Refrigerate for 15–20 minutes to firm up. Enjoy immediately or store for later.
