In a small bowl or large ziplock bag, whisk together the olive oil, soy sauce, lemon juice, honey, garlic cloves, oregano and pepper. Add the chicken to the bag and gently massage the marinade into the chicken. Place in the refrigerator and let marinate for at least 30 minutes (or up to 4 hours).
Preheat the grill or grill pan over medium high heat. Lightly coat with cooking spray to help prevent sticking.
Drain the chicken and discard marinade. Add the chicken to the preheated grill. Cook for 5-6 minutes per side, or until nicely charred and cooked through.
