Preheat the oven to 375 degrees. Line a baking sheet with parchment paper and lightly grease to prevent sticking.
Prepare the glaze: In a small bowl, whisk together the maple syrup, dijon mustard, 1 tablespoon olive oil, salt and pepper.
Place the pork tenderloin on the prepared sheet and use a paper towel to pat dry. Use a pastry brush to generously coat the pork in the maple glaze, making sure to evenly coat.
Place the pork in the preheated oven and roast for 25-30 minutes, or until it reaches an internal temperature of 145 degrees F. Remove from the oven and allow to rest for 5 minutes before slicing into 1/2" thick medallions.
While the pork roasts, prepare the apple slaw. In a large bowl combine the julienned apples, sliced cabbage, apple cider vinegar, honey, remaining 1 tbsp olive oil, and salt and pepper to taste. Toss to combine.
Serve the pork tenderloin with a scoop of apple slaw, and garnish with parsley if desired.
