These family-friendly lentil sloppy joes are a hearty, plant-based twist on a classic sandwich. Made with brown lentils, vegetables, and a savory tomato sauce, this easy weeknight dinner is nutritious, budget-friendly, and kid-approved.
Heat olive oil in a large skillet or pot over medium heat. Add diced onion, bell pepper, garlic, chili powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until vegetables soften and become fragrant.
Stir in the rinsed lentils, vegetable broth, tomato sauce, tomato paste, ketchup, vegan Worcestershire (or soy sauce), maple syrup, and mustard. Bring the mixture to a gentle simmer.
