Preheat oven to 425°F and line a muffin tin with liners.
In a medium bowl, whisk together flour, baking powder and salt.
In a separate bowl, whisk together the sugar, oil, egg, and vanilla extract. Whisk vigorously until the mixture becomes light and slightly fluffy. Add the greek yogurt and milk and whisk until smooth and combined.
Pour wet ingredients into the dry ingredients. Gently fold until just combined. Do not over mix! Fold in chocolate chips. Scoop batter into muffin cups.
Bake the muffins for 5 minutes at 425°F, then lower the oven temperature to 350°F and continue baking for 15 minutes. This initial high temperature baking helps create tall, bakery-style muffins.
